2tsp baking powder
1/2 tsp baking soda
125g caster sugar
110ml full-fat milk
grated rind of one large orange
100ml orange juice
1/2 tsp vanilla essence
100g blueberries, washed
3tbsp sugar with 3 tsp cinnamon
Preheat oven to 200C. Sieve flour, baking powder, baking soda and caster sugar into a large bowl. In another container, warm the butter until it has melted. Remove from the heat and beat in milk, orange rind and juice, eggs and vanilla essence. Mash the banana and stir into the liquid with the blueberries. Transfer mixture into a bowl and fold in the dry ingredients. Place the muffin cases into a 12 hole muffin tray and divide the mixture between the cases. Sprinkle with the cinnamon sugar mixture. Bake for 10-12 minutes or until muffins spring back when pressed in the centre.
Let your toddler spoon the mixture into each muffin case.
