Healthy chicken burgers

From 1 year 

Serves 4

  • 500g chicken, skinned, boned and minced
  • 1tbsp dark soy or tamari sauce
  • 1tsp fresh ginger, grated
  • 1 clove garlic, crushed
  • 1tbsp coriander, finely chopped
  • wholemeal flour to coat
  • olive oil, for frying
  • 4 soft tortillas
  • mayonnaise, lettuce and avocado to serve

Put all the ingredients, except the flour for coating and the olive oil, in a large bowl. Mix thoroughly and set aside for a few minutes to let the flavours mingle. Shape the mixture into four burgers. Toss each burger lightly in the flour to coat. Heat the olive oil in a frying pan and fry the burgers for 3-4 minutes on each side, until cooked through.
Alternatively, the burgers can be brushed with oil and grilled or baked in a moderately hot oven, turning them once. Serve in soft tortillas with mayonnaise, shreds of lettuce and slices of avocado. Or if you prefer, put the burgers in warm wholemeal baps and substitute sour cream
for the mayonnaise.

Potato cakes with grilled bacon

From 1 year

Serves 4

  • 500g cooked potatoes
  • good knob of butter
  • 2tbsp wholemeal flour, plus extra for coating
  • olive oil, for frying
  • 8 rashers smoked lean bacon
  • grilled tomato halves to serve (optional)

Mash the warm potatoes thoroughly with the butter, then work in the flour. Taking about 2tbsp of the mixture at a time, make eight potato cakes. Roll them in the extra flour and shape into smooth, flat rounds. Heat the olive oil in a frying pan, add the potato cakes and fry until crisp and golden on each side. While the potato cakes are cooking, grill the bacon and tomatoes. Drain the bacon fat. Serve the potato cakes with the bacon and tomatoes.

Fruit chunks dipped in chocolate sauce

From 1 year

Serves 4

  • Fresh fruit, washed and chilled for 2-3 hours
  • 250-300g dark chocolate, minimum 70% cocoa solids
Cut fruit into chunks, if appropriate, and put into a bowl or on a large platter. Break the chocolate into pieces and put it in a bowl set over a pan of hot, but not boiling water. Leave it to melt. Keep warm in a fondue pot or in the pan of water while the children dip the fruit chunks into it.
