  • Give your little ones a taste for cooking with this delicious pancake recipe.

Pancakes are delicious and  so easy to make- you can get your toddler involved too.

This healthy recipe uses a mixture of wholemeal and white flour to boost the vitamin and fibre content. The eggs and milk are good sources of protein and the fruit fillings will provide extra vitamins.

This recipe makes: 10-12 pancakes

You will need:

70g (2½ oz) Plain white flour

70g (2½ oz) Plain wholemeal flour

2x size 3 eggs

250 ml (8fl oz) milk, full fat or semi-skimmed

A little vegetable oil or spray for frying

Method:

Place all the pancake ingredients in a liquidiser or food processor and blend until smooth.

Alternatively, mix the flours in a bowl. Make a well in the centre. Beat the egg and milk together. Gradually add the milk and egg mixture to the flour by gently beating to make a smooth batter.

Place a non-stick frying pan over a high heat. Spray with fat or add a few drops of oil.

Pour enough batter to coat the pan thinly and cook for 1-2 minutes until golden brown on the underside.

Turn or toss the pancake and cook the other side for 30-60 seconds.

Turn out onto a plate, cover and keep warm while you make the other pancakes.

Toppings:

Try adding one of these delicious, healthy fillings and toppings:

• Lemon juice and sugar

• Sliced banana drizzled with honey

• Sliced strawberries mixed with strawberry fromage frais

• Apple puree and sultanas

• Frozen summer fruit mixed, thawed (available from most supermarkets)

• Sliced fresh or tinned fruit such as pineapple, mango, or peach

• Fresh or tinned cherries and a spoonful of Greek yoghurt

 
BabyExpert top tip:

Create fun shaped pancakes by pouring the batter into greased, stainless steel children’s pastry/cookie cutters. Remove the cutter once the batter has set and turn or toss as normal. The Cakes Cookies & Crafts Shop has a good selection.
