  • Knickerbocker Glory

    Packet of raspberry jelly
    180g raspberries
    2 tbsp icing sugar
    Half tsp fresh lemon juice
    2 or 3 favourite fruits eg blueberries, mandarin segments
    1x500ml tub vanilla ice cream

    Make jelly according to the instructions on the packet and leave to set. Make sauce by blending raspberries, icing sugar and lemon juice. Sieve to remove seeds and chill until needed.
    Take four sundae glasses and divide some of the jelly among each glass. Layer fruit over the jelly aiming to get a good mixture of  different fruits. Add another layer of chopped jelly and top with scoops of ice cream. Pour raspberry sauce over the top.
