Blueberry yoghurt lollies

Makes a full tray of 11

These mini lollies may be just the way to introduce younger members of the family to fresh fruits and yogurts, especially if they have a hand in making them. Blueberries are used in this recipe, but any of your favourite fruits can be substituted.

Once frozen the silicone simply peels away, revealing a mini lolly, ready to enjoy on hot summer days.

What you need:
125g fresh blueberries
2 tablespoons sugar
3 small pots (approximately 125g each) blueberry yogurt
125g whipping cream
11 lolly sticks
 

1. Stand the muffin tray on a small baking sheet that will fit into the freezer.  Roughly chop the blueberries adding sugar to suit personal taste.  Spoon a little of the fruit into the base of each cup.  Open freeze for approximately 1 hour.

2. Beat together the yogurt and cream.  Fill the cups to the top with this mixture.  Push a lolly stick into the centre of each one.  Open freeze for at least 6 - 8 hours, or overnight.

3. To release, simply push up the lolly from beneath.  Once frozen the lollies can all be unmoulded and individually wrapped, freeing up the tray for further supplies.  Return the wrapped lollies to the freezer immediately.
